No Fear Risotto
I have to admit—I’ve always been scared of risotto. It tastes so luxurious, so fancy, and I always assumed it was really tricky to make. I never wanted to fail, so I never tried to make it. And then I did.
I’ve been making risotto for a couple of years now, and every time I’m shocked at how easy it actually is. It takes a long time, sure, but the wait is more than worth it. And if you know how to stir a pot, you too can make a perfect risotto.
This recipe was featured in the magazine I write for, Good Grit. It’s a vegan risotto, and was just as delicious and creamy as the kind that’s filled with parmesan or gouda. Simply superb.
