If there’s one thing NYC has a lot of, it’s Australian cafes. At least there’s one in almost every corner of my little neighborhood in the Lower East Side. I’ve tried a few of them–all good coffee and menus full of toasts–but none have pleased me like Good Thanks.

This place serves the fluffiest swirl of eggs I’ve ever seen. Have you ever bitten into a cloud? I truly didn’t know eggs could get this light. The inside is pleasantly creamy–a dream on top of a pretty chewy piece of toast. I was surprised! I was delighted!

Can I ever eat other eggs again? Definitely yes. A lacy fry will always please my palate, but as far as soft scrambles go, this one may be impossible to beat.
